If you’re anything like me, you’re always looking for ways to make life easier. Especially when it comes to cooking meals for the family. Once you throw a picky and stubborn toddler in the mix, mealtime tends to get stressful!
Honestly, if it were up to my little one we would have hot dogs and string cheese for every meal. So whenever I find a recipe that he enjoys as much as my husband and I do, then I’m overjoyed! After all, who wants to cook multiple meals for every dinner?
This is my mother-in laws recipe which happened to be my husband’s favorite dinner when he was a kid too! (I swear my child and husband are so much alike, it’s scary!) I am SO thankful that she gave me this delicious recipe!

- If you have leftover chicken sitting in your fridge you can easily throw it in without telling the difference!
- This casserole is delicious the first day, but it gets even better as leftovers!
- It is easily paired with a side of roasted vegetables like broccoli or carrots (that your toddler will probably not eat. Let’s be real).
- It is so filling!
Ingredients
- 8 oz egg noodles
If your family loves noodles, you can definitely go ahead and add more!
- 2 cans cream of chicken soup
I use generic condensed cream of chicken soup (or whatever is on sale for that week). Each can is 10.5 oz.
- 1 cup sour cream
Full fat or light can be used.
- 3 chicken breasts
Or about 1 ½ pounds.
- 1 onion
I like to use a large onion, because my family loves the taste. If you or your family aren’t big onion fans, you can use a smaller one. If your children refuse to eat any onions, blend it up before adding to the dish. That way you won’t lose any of that flavor!
- 1 tsp garlic salt
Adds a subtle garlic flavor to the dish!
- 2 tablespoons butter
Salted or unsalted can be used.
- ¼ cup water
Don’t use more than the recipe calls for as it may cause the dish to become watery!
- 1 chicken bouillon
You can substitute it with a chicken bouillon paste or even chicken broth.
- 1 cup shredded cheese
I typically use colby jack shredded cheese, and some days I’ll add more than the recipe calls for 😉
How to
Chicken Manicotti Casserole
Ingredients
- 8 oz Egg noodles
- 21 oz Cream of chicken soup Or 2 cans
- 1 cup Sour cream
- 3 Chicken breasts (cubed)
- 1 Onion (diced)
- 1 tsp Garlic salt
- 2 tbsp Butter
- 1/4 cup Water
- 1 Chicken bouillon
- 1 cup Shredded cheese
Instructions
- Cook noodles. Drain and set aside.
- Combine soup and sour cream in a medium bowl.
- Cook cubed chicken breasts. Add to soup mixture.
- Saute onion, butter, garlic salt, chicken bouillon, and water until onions become softened. Add to chicken and soup mixture.
- Pour chicken and soup mixture over noodles and mix well.
- Once combined put mixture into casserole dish.
- Bake uncovered at 350° for 20-25 minutes.
- Sprinkle shredded cheese on top and broil for an additional 5 minutes (or until golden brown).
